Spiced Pumpkin and Maris Piper Soup


Preparation and cooking time: 25 minutes
Serves 8


  • 400g Wilson’s Country Maris Piper potatoes 2
  • 500g Pumpkin
  • 50g Carrots
  • 1 Onion, chopped
  • 400ml Light coconut milk
  • 570ml Water
  • 2 Vegetable stock cubes
  • 3 Teaspoons medium curry powder
  • 2 Cloves garlic, crushed
  • ¼ Inch fresh ginger, peeled and grated
  • 7g Fresh chopped coriander
  • Salt and pepper


step 1

Peel and chop the pumpkin, potatoes, carrots and onion and place in a large saucepan with coconut milk, water and stock cubes.

step 2

Bring to the boil, reduce temperature to medium, add remaining ingredients and simmer for 15 minutes until cooked.

step 3

Use a hand blender and blend to a smooth consistency and serve.
