- 500g Pumpkin
- 50g Carrots
- 1 Onion, chopped
- 400ml Light coconut milk
- 570ml Water
- 2 Vegetable stock cubes
- 3 Teaspoons medium curry powder
- 2 Cloves garlic, crushed
- ¼ Inch fresh ginger, peeled and grated
- 7g Fresh chopped coriander
- Salt and pepper
