Easy Salmon Cakes

Preparation time: 15 mins. Cook time: 20 mins
Serves 4


  • 400g Wilson’s Country Navan Potatoes
  • 240g Cooked salmon
  • 100g Leek, washed and chopped
  • 100g Grated cheddar Cheese
  • 14g Chives, chopped
  • Pinch salt
  • 1 Egg, beaten
  • 50g Flour
  • 100g Breadcrumbs
  • 100mls Light oil

Peel, dice and boil the potatoes until tender, then mash.

Fry the leeks. Flake the cooked salmon into a bowl and add the potatoes, leeks, cheese, chives and salt.

Combine. Divide into 4 large patties; coat each Pattie first with egg, then flour and lastly breadcrumbs.

Heat oil in a frying pan and gently fry the fish cakes for 10 minutes on either side, until golden.
