American Style Twice Baked Potatoes

Enjoy on their own or as a side dish.

Serves 4


  • 1 bag of Wilson’s Country Baking Potatoes
  • 15mls Olive oil
  • 6 Rashers of smoked bacon, chopped
  • 3 Scallions, chopped
  • 195g Sweetcorn
  • 100g Grated cheddar
  • Salt

Set oven temperature to 180oC/350oF/Gas 4

Place the Wilson’s Country Baking Potatoes into a microwave and cook for 18 minutes.

Remove from microwave, leave for 10 minutes to cool, then slice off a lid from each potato, scoop out the inside into a bowl and mash.

Fry the bacon in oil until golden, add scallions, sweet corn, cheddar, mashed potato, salt and mix.

Finally, spoon the mixture back into the potatoes, place the lids on top and bake in a pre-heated oven for 15 minutes.
